The concept of eating with the seasons feels ancestral — a connection to agricultural cycles that most urban people have long since lost. In modern supermarkets, the same produce is available year-round from different growing regions across the world, making the seasons invisible to the shopping basket. But seasonal eating has real and evidence-supported implications for nutritional quality, environmental impact, food access, and the economic viability of local food systems — and the trend toward rediscovering it reflects genuine value, not mere nostalgia.

The rise of flexitarian and plant-forward eating has directed more attention to the quality and variety of plant foods, making seasonal variation more relevant. And a growing body of research on the nutritional benefits of fresh, in-season produce has provided scientific backing for what traditional food cultures observed empirically: food picked ripe and eaten fresh is nutritionally superior to food picked early and transported long distances.

The Nutritional Case for Seasonal Produce

The nutritional content of fruits and vegetables begins declining from the moment of harvest, as enzymatic processes continue and volatile compounds evaporate. Produce sold in season from local farms has typically been harvested within one to two days of sale. Produce sold out of season has typically been harvested 2 to 4 weeks earlier, refrigerated in controlled atmosphere storage, and transported across continents. Research consistently shows meaningful differences in nutritional content between fresh in-season and stored/transported produce.

A study by researchers at the University of California Davis found that spinach stored at room temperature for three days lost 47 percent of its folate. At refrigerated temperatures, losses were slower but still significant. Studies on strawberries, broccoli, tomatoes, and other produce consistently find reductions of 15 to 50 percent in vitamin C, folate, and various polyphenol compounds over the storage and transport times associated with out-of-season supply chains. These are not trivial losses for nutrients already consumed at borderline adequate levels by many people.

A Seasonal Guide: What to Eat When

The following seasonal guide applies to temperate Northern Hemisphere climates (UK, Northern Europe, Northern US), with the understanding that seasons differ by latitude and that local growing conditions vary:

Spring (March-May): New-season asparagus (one of the most fleeting and most anticipated seasonal arrivals, typically available for only 6 to 8 weeks and far superior in freshness to imported alternatives), purple sprouting broccoli, spring greens, spinach, radishes, rhubarb, wild garlic, early broad beans, peas, and spring onions. Summer (June-August): The peak of soft fruit — strawberries, raspberries, blueberries, cherries, redcurrants, blackcurrants, gooseberries. Tomatoes, courgettes, runner beans, sweetcorn, cucumber, new potatoes, beetroot, summer squash, and herbs. Summer produce is richest in vitamin C and polyphenol antioxidants, with the highest concentration during peak ripening.

Autumn (September-November): Apples, pears, plums, blackberries, elderberries, pumpkins, squash, kale, cauliflower, leeks, fennel, celeriac, and mushrooms. Autumn’s root vegetables and squash provide beta-carotene, potassium, and dietary fibre. Kale peaks in autumn and winter and is among the most nutrient-dense vegetables available.

Winter (December-February): Root vegetables dominate — carrots, parsnips, turnips, swede, celeriac, beetroot. Brussels sprouts (which improve after the first frost, which converts some starch to sugar). Savoy cabbage, leeks, cavolo nero, and citrus fruit (though citrus is not locally grown in temperate climates, its peak harvest timing from Mediterranean and subtropical growing regions coincides with winter). Winter eating focuses on storage crops and robust brassicas, with an emphasis on vitamin C (from citrus and brassicas), carotenoids (from root vegetables and dark leafy greens), and folate.

The economic dimension of seasonal eating is also significant: seasonal produce is typically significantly cheaper than out-of-season equivalents, because supply is high and transport costs are low. Buying seasonal produce directly from local farmers markets, community-supported agriculture shares, or farm shops is often cheaper than supermarket equivalents, while providing higher nutritional quality. This is one of several reasons that seasonal eating, rather than being an elite lifestyle choice, has genuine food equity potential when it is accessible through local food systems that serve all communities.
