Walk the “health food” aisle of any supermarket and you will find products that are confidently sold as better-for-you choices but that contain, on careful examination, sugar levels that rival the confectionery aisle. This is not accidental. It is the deliberate commercial strategy of positioning sugar-laden products as healthy by emphasising real or marginal nutritional attributes (whole grains, added vitamins, “natural” sweeteners, gluten-free) while minimising or disguising the sugar content. Understanding how this strategy works — and what to look for on labels to see through it — is a practical skill with direct implications for dietary quality and health.
The Naming Strategy: 61 Names for Sugar
The most fundamental strategy for disguising sugar content on food labels is using a large number of different sugar names so that no single ingredient appears high enough on the list to alarm a consumer. The ingredients list on a food package is ordered by weight — the most abundant ingredient appears first. If a product contains 35 grams of sugar per serving from a single source, “sugar” would appear very high on the ingredients list. If the same 35 grams comes from five different sugar sources — each contributing 7 grams — none of them appears alarming individually, and each may appear far down the list.
The nutritional epidemiologist Michael Pollan has documented more than 61 names under which sugar appears on food labels in the United States. These include: high-fructose corn syrup, agave nectar, agave syrup, brown rice syrup, barley malt, cane juice, cane juice crystals, coconut sugar, date sugar, dextrose, evaporated cane juice, fructose, fruit juice concentrate, glucose, glucose syrup, golden syrup, honey, invert sugar, lactose, malt extract, maltodextrin, maltose, maple syrup, molasses, palm sugar, raw sugar, rice bran syrup, sucrose, syrup, treacle, and turbinado sugar. Nutritionally, these are all sugars. The marketing that presents some of them (honey, agave, coconut sugar, date sugar) as categorically different from “sugar” or “high-fructose corn syrup” is not supported by the available evidence. The body processes glucose and fructose regardless of their original botanical source.

The “Health Halo” Products: Where Sugar Hides Most Effectively
The products most reliably hosting surprising quantities of sugar are those with strong health marketing. Understanding the specific categories where sugar hides most effectively prevents the health halo effect from derailing genuinely beneficial dietary choices.
Flavoured yoghurts: Plain full-fat Greek yoghurt contains no added sugar and provides approximately 10 grams of natural lactose per cup — a sugar that is absorbed more slowly due to the protein and fat matrix. A standard flavoured fruit yoghurt contains 15 to 25 grams of added sugar per container. The fruit-flavoured product and the plain product are not nutritional equivalents — they are categorically different foods despite sharing a product category.
Granola and “healthy” breakfast cereals: Granola is among the most deceptive products in the supermarket. A glass of orange juice (250 ml) contains approximately 25 grams of sugar — equivalent to six teaspoons — with virtually no fibre to moderate its absorption. Energy and protein bars: The sports nutrition category is particularly susceptible to health halo effects. Many protein bars that are marketed to fitness-conscious consumers contain 20 to 30 grams of added sugar alongside their protein content, making them nutritionally closer to a candy bar with added protein isolate than to a genuinely functional sports food. Reading Labels Effectively: A Practical Skill

The “total sugars” line on the nutrition panel includes both naturally occurring sugars (lactose in dairy, fructose in whole fruit) and added sugars. Some nutrition labels now separately list “of which added sugars” — where this information is available, it is the most useful figure. In the absence of separate added sugar disclosure, applying contextual judgment helps: yoghurt’s sugar content is largely natural lactose; a fruit-flavoured cereal bar’s sugar is largely added.

The rule that transfers most simply to everyday shopping: products with short ingredient lists featuring recognisable whole food ingredients almost never need scrutiny for disguised sugar. Products with long ingredient lists featuring multiple sweetener names need scrutiny regardless of what their front-of-pack claims. The health halo is a marketing device, not a nutritional guarantee.
